Firstly, all the classics of Caucasian cooking are presented, from kharcho with a tear to fragrant lobio, from khachapuri languishing in suluguni to velvety satsivi. Secondly, they feed you Uzbek food, which is replete with a bright Eastern bazaar: pilaf, kaurva-lagman, shurpa, samsa from a local tandoor and shashlik from a local grill. An additional bonus is the iconic Peking duck, for which a special oven was brought.
